Everyone loves a chewy, sweet marshmallow! These homemade marshmallows are not just simple to make, but are also nearly calorie free (in moderation of course)!
In a large bowl, mix the gelatin with cold water and allow it to sit for at least 5 minutes.
Combine Steviva Blend Fine Powder and remaining hot water in a saucepan and stir.
With a candy thermometer, heat mixture over high heat until it reaches 250°F.
Carefully and slowly mix the hot mixture to the rehydrated gelatin. Stir in the vanilla extract and cinnamon and inulin.
Whip this mixture on high with an electric mixer until stiff peaks form (similar to meringue).
Pour whipped mixture into a greased 13x9 pan.
Allow this to set-up overnight for at least 6 hours. Once set, cut into 1x1" squares!
Sprinkle the marshmallows with leftover Steviva Blend Fine Powder and store in an airtight container.
